Bake potatoes with skin is one of the healthiest ways to cook potatoes. Whole and baked potatoes with skin on is the purest form as this process can minimise loss of nutrients. Avoid adding unhealthy oils, butter, cream, cheese and artificial flavouring in high amounts. The potato’s fiber, potassium, vitamin C, and vitamin B6 content, coupled with its lack of cholesterol, all support heart health.
Storage tips:
- Keep potatoes in plastic bag perforated with lots of little holes for air circulation
- Keep potatoes in a DARK place. Drape bag with kitchen towel to block light
- Don’t store potatoes where it could get warm, like under the sink, next to a big appliance
- Don’t wash potatoes until you are ready to cook them
